The simple answer is there is not really an easy source for café racer style parts for this bike. It can be done with a deep pocket, like with this one with an alloy tank. remove shock covers when they get cut down. remove neck covers, all engine and tranny chrome covers, left side mirror, reflectors. decapitate and cutout the stock airbox and get a k&n filter. pair removal. you can remove the plastic head covers and the fins on the head. be warned the engine is fugly without them.
